Creating our Tsuya Men
With a single goal of creating the perfect tonkotsu ramen, ICHIRAN’s craftsmen are constantly increasing their knowledge through research into various related fields.
One very skilled artisan discovered a technique for creating dried noodles that are as moist and smooth as fresh noodles. These noodles were so sweet and fragrant that they could not be archived as just another research experiment. Instead, the team continued to test and develop the noodles, creating the Tsuya Men.
